About Medovik
Medovik is a beloved Eastern European honey layer cake with roots in 19th-century Russia. Legend has it the cake was created by a young chef at the Imperial court for Empress Elizabeth Alexeievna, who famously disliked honey — and yet fell completely in love with the result.
Each cake consists of thin, golden honey sponge layers that are baked until just crispy, then alternated with a generous sour cream filling. After a night in the fridge, the layers absorb the cream and transform into something tender, aromatic, and utterly irresistible. The longer it rests, the better it gets.
Ingredients
The honey layers are made from: flour, honey, butter, eggs, sugar, and bicarbonate of soda. The filling consists of: sour cream, powdered sugar, and optionally a touch of condensed milk for extra richness. The cake is finished with fine crumble from the trimmed layer edges.
Decoration options
- Red fruit — fresh raspberries and redcurrants on top
- Caramel — caramel drizzle with a pinch of sea salt
- Strawberries & cream — fresh strawberries with lightly whipped cream
- Nuts — roasted walnuts or hazelnuts
- Blueberries — fresh blueberries, optionally with a light blueberry compote
Tips & ordering
Order at least 2 days in advance — the cake is at its very best after 24 hours of resting in the fridge. Serve at room temperature for full flavour. Whole cakes can be personalised for birthdays or special occasions on request.
